The chicness of soba is preserved by 2:8.
“2:8 Soba” is the most famous example of specialties created in Edo and developed in Tokyo.
Right now, roughly 300 years since the middle of the Edo period, there are numerous long-standing soba specialty shops in Tokyo.
These shops, through a process of branching out into new independent shops, have passed down their unique techniques and practices to the modern era, and they offer customers authentic Edo-period flavors.
It is our hope to pass on these traditional techniques and flavors, which have been preserved and developed over the course of nearly 300 years, to the next generation.
